I've been working on my baking for the last year. Cookies and cakes were easy as a start, but the idea of making a crust was keeping me from moving into pies. But I love pies. I took a shot at this book and I'm really happy. The beginning section on different kinds of crusts and the role ingredients play is like an episode of Good Eats. It made the process make sense. I've been really happy with the results I've gotten following this book.Why not five stars? I think the book is a bit too tough to navigate. It's organized by type of pie, but for me the categories aren't intuitive. I need to go to the index too often. 4.5 stars might better describe my satisfaction.)
I bought this book as a gift for my wife, I'm not the baker in the family. She is very excited over the detail information provided and the huge variety of pie recipes offered. It was a winner for a gift and I look forward to eating the results.
I have to admit, I'm a pie-fanatic. I love pies---they're yummy and generally really easy to make. So, I'm always interested in new pie recipes and was intrigued when this book came across my email as a Kindle Daily Deal. I was however, very disappointed after downloading it to find that it was difficult at best to navigate on the Kindle (although, I'm not complaining about he Kindle; I LOVE MY KINDLE). And, there are no pictures, which is also really disappointing. I'm not certain if there are pictures in the hard-copy version. There weren't any displayed as part of the "Look Inside" feature.I have made several of the recipes and they were good. So, I can't really complain since I purchased the book for just 99 cents. Bottom line, I would recommend purchasing this book as a hard-copy but not as a Kindle version. And don't expect pictures.

I love baking pies. The Everything Pie Cookbook has provided me with fresh new ideas. I enjoy having it on my kindle to guide me into getting great compliments from my husband and friends.
I checked this book out from the library today and decided to make my first pie ever. I've been trying my hand at baking lately and I'm enjoying it. I don't usually like books with no pics, but it was one of the few books I found with an all butter pie crust recipe (page 23). It was very simple: 1 1/4 cups flour, 8 tbs chilled butter, 1/2 tsp salt, 1tbs sugar and 3-4 tbs ice water (I doubled the recipe and forgot to double the water). I added a tsp of cinnamon. I followed the directions to combine the ingredients and then placed it in the fridge to chill. At first the crust cracked and tore as I rolled it out(as instructed, I let it rest for 10 mins once outside the fridge), but I just pulled it up, rolled it back into a circle and started again. I used the crust to make the Home-Style Apple Pie recipe (page 42)and absoluetely Loved it! For the filling, I used 2 large granny smith and 2 large gala apples. I combined: 1 cup brown sugar, 1/4 cup corn starch, 1 tsp each of nutmeg and cinnamon; I then poured this mixture over the apples and let it sit for 10 mins (per the directions). I baked the pie in a 9 inch tart pan (I did not bake it for as long as the recipe recommends; I baked it at 400 for 20 mins and then lowered to 360 degrees for 25 mins). We let it cool for 15 mins, then served it with ice cream. My husband's usual "It's not bad" (he's an engineer lol)was "This is excellent!" I'm currently on a cookbook ban, but I might just have to nag until I can get this one. If you're not on a ban like I am, just go ahead a purchase the book--you won't regret it. By the way, I discovered there are five pages of pics (for 19 recipes) between pages 214 and 215; this was after I baked my pie... Please see my photos.
I am finally purchasing this book after maxing out my checkouts of it from my local library. It is as advertised; everything you ever wanted to know about crusts, pies and toppings, and dozens of recipes including all of traditional pies you can think of. Potpies, ice cream, cream, fruit and hand pies all have their own chapters. I was especially appreciative of the section on lowfat and vegetarian substitutes. Most cookbooks are either health-oriented or not. This one is both. If there is a pie or tart you've EVER considered making, this is the first place to look.
I decided to prepare the Bourbon Pecan Pie. As I read through the ingredients to ensure I had everything required to make the pie, I noticed that nowhere was bourbon mentioned. It wasn't listed in the ingredients or mentioned in the directions. The reason this is a big deal is because guessing how much bourbon should be used could ruin the pie and waste the pricey pecans and other ingredients. Worse, this error made me wonder if there are other omissions from other recipes in the book -- things I wouldn't notice because they weren't as obvious as no bourbon in a bourbon pecan pie.Unhappy as I was at the lack of illustrations of the pies and the green ink used throughout the book (not so easy to read when laid open on a countertop) those are not fatal errors. But, the recipes should have been tested and the text well proofread so readers didn't waste money and time.
